Cool and Crisp Shrimp Salad

  • 1 cup mayonnaise
  • 1/2 cup REX Creole Mustard
  • 1 Tbs. lemon juice
  • 1 tsp. REX Dill Weed
  • 2 hard boiled eggs
  • Baby greens
  • 1 lb. small shrimp
  • 1/2 cup REX Dry Crab Boil
  • 1/2 cup celery
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup sliced almonds
Boil shrimp in REX Dry Crab Boil, per package directions. Let chill 2 hours. In a large bowl, mix all other ingredietns except eggs and baby greens. Cut eggs in wedges and set aside. Remove shrimp from refrigerator, peel and add to mixture. Serve over a bed of baby greens garnished with egg quarters.
